I like the idea of roasted delicata squash rings topped with sausage and swiss chard. Maybe you could cook the sausage and swiss chard together in a stirfry, saute kind of thing.
Warm spinach salad dressed with cooked apples and onions (leeks maybe?), dried cranberries or cherries, and topped with barely hardboiled duck egg.
At the risk of being type-cast, curried cauliflower, roasted, with apples and leeks. This would use simple yellow curry powder though, more Indian derived than Thai. You could have it with rice (basmati would be lovely) and shallow-fried duck egg, served with nam pla and lime or sriracha as condiments.
I hear cakes are lovely when made with duck eggs due to their higher fat content and rich flavor. Personally, I'm in no place right now to be cooking cakes from scratch so, I'll just put it out there and leave it at that.
I like. Everything! I'm most intrigued by this cauliflower idea, though. Yum.

Duck eggs, for the record, of ridiculous big yolks. But they taste basically like a really good chicken egg. (Scrambled anyway. Cooked easy/barely may be an entirely different story).
If you would like to make me a duck-egg cake for my birthday that would be awesome. kthxbai.
